MAKES ME WONDER?

Ever had anyone tell you you’re good at something but you’re not sure if they are just saying it to be nice or whether it is really true, maybe I’m just paranoid but it’s been so long since I was given a compliment, like that taste good or you’re a good chef that now when people say that I just all paranoid and worried that I generally don’t take it on bored but now I feel bad because maybe they are being truthful but now I’ve laid all this on my blog maybe now I look like a dick, just kind of makes me wonder are nice comments fact or fiction.
MAYBE I just think too much!

SOMETIME’S YOU GOTTA DO WHAT YOU GOTTA DO!

If you have read my last entries on my blog you will know that I have left the place where I trained for my apprenticeship, by no means was this an easy decision it was by far one of the hardest things I’ve ever had to do.
Leaving everything I’d ever known and moving on out of my comfort zone was never going to be easy I guess I just always thought I wouldn’t leave until I was ready to go overseas, however I did make the choice to leave before I had planned.
I’m now working at a local pub in the bistro there, I love it! I’ve made new friends and once again enjoy cooking and am finding my passion again! To be completely honest it is not the kind of food I want to do, but by making this small sacrifice which I am willing to do make it all okay and a new experience. I miss doing the fine dining food but I have learnt that you should take every opportunity and learn to take the best from every decision you make. I am now enjoying less hours, less responsibility and more money all for one small sacrifice.
MY THOUGHTS ARE THIS ON PUB FOOD: Just because you’re eating pub food doesn’t mean you shouldn’t be getting the best of the chef in the kitchen, so if you’re at a pub and your meals not right send it on back or complain, we can’t fix what we don’t know about, having said that just because you are at a pub doesn’t mean you’re meal shouldn’t be perfect or your steak shouldn’t be cooked exactly the way you like it!
So Parma’s, Kiev’s, stir fry’s are now what I’m cooking and we feed at least 50 people per night, weekends however are completely a different story, you’re looking at, at least over 100 people per night on Friday, Saturday and Sunday’s again I was not use to feeding so many people but don’t for 1 second think I thought it was easy, I mean you feed all these people all within 2 hours. I’m glad I was taught in my apprenticeship that setting up ready for service was an essential skill and asset of being a good chef.
This small sacrifice is all part of getting where I want to go, that’s right you guessed it Europe so it looks as though I could be flying out as early as end of June 2008. But don’t stress guys there will be a going away party, but strictly invite only so no invite no entry!

CONTIKI....is it, ON OR OFF?

Contiki! I’m not sure if it’s really what I’d like to do anymore! I’m kind of thinking that I might like to travel to a loose schedule rather than a pre planned tour, don’t get me wrong Contiki sounds awesome, but I’ve started thinking a lot about next year and what I really want to do when I’m in Europe.

I’d rather travel to a loose schedule so I can if I like stay longer in a town if I like it rather than spend a limited time in a town in which I’d love to spend more time in. There is also the issue of cost Contiki requires that you pay a compulsory meal allowance for the entire tour but this only covers 1 or 2 meals per day, but that on top of the tour cost as well as spending money can actually work out fairly expensive. Plus I’ve heard sometime’s Contiki will take you to or suggest, for example a bar to drink at, a bar which can be more expensive then another bar right around the corner because Contiki get kick backs I’m not sure if this is true but I can say it’s what I’ve heard.
So I’d rather do individual city tours with my mate Sarah whom I’m going to visit so I’ll get to spend time with my mate doing city tours, discovering pub and clubs, cool or undiscovered cafes and restaurants, rather than do one large tour with people I don’t know or even worse that I don’t like!

THOUGHTS.......

On recent travel to Melbourne by train, I found myself looking out the window, watching the tiny towns along the way quickly flashing past I could see houses with smoke arising from the chimney’s and I got to thinking....... my thoughts drifted to Europe as they often do! I started to think I wonder if when I get to Europe I might find myself gazing out the window of an European train watching quant English houses flash by and think “gee that place kind of looks like that place I seen on the way to Melbourne that time”.......I just wonder if I’d have those thoughts when I’m there. It’s kind of funny the way I wonder about those little things.
